This spin on Chicken Tortilla soup will warm up your coldest winter days with an innovative spice blend from your favorite Bloody Mary Mix.
2 QTS Chicken broth–make your own or buy a couple of boxes!
2 cans petite diced tomatoes
2 cans fired roasted green chilis
2 finely chopped yellow onions
1/3 bottle of Miss Mary’s Bold & Spicy Bloody Mary Mix
Salt and freshly ground black pepper, to taste
1.5lbs chicken breasts (cooked) or 1.5 Rotisserie Chickens
1 (14.5 oz) can black beans, drained and rinsed
1 (14.5 oz) can pinto beans, drained and rinsed
1 1/2 cups frozen corn
1 cup whole milk
Optional (for serving): Tortilla strips or tortilla chips
Shredded cheddar or Monterey jack cheese
Diced avocado, diced Roma tomatoes, sour cream (optional)
INSTRUCTIONS-Let’s do this!
Pour chicken broth into a large pot. Add everything and season with salt and pepper to taste. Bring to a boil and then reduce heat and let simmer until you want to eat it. Super easy right?
Serve warm with tortilla strips and cheese and other optional ingredients.
Tastes great with a Miss Mary’s Bloody Mary Mix or a glass of white wine.
Not a fan of so much heat? No worries, that much flavor is hard to get used to. Just substitute the Bold & Spicy for Miss Mary’s Original Bloody Mary Mix.
